Pumpkin Spice Affogato
Would you guys believe me if I told you that I totally didn't plan to post a coffee recipe on national coffee day? Because trust me, I so did not. In fact, if I had known it was national coffee day, I definitely would have planned a recipe for tea...or lemonade...or basically anything BUT coffee. I abhor all these national everything days with every bone in my body and think they are sillier than the naked cowboy strolling around Times Square. But looks like the jokes on me this time as I'm posting a recipe for Pumpkin Spice Affogato on National Coffee Day. I mean, could I get any more basic?! Throw in some avocado toast and they might as well put my face in the dictionary next to 'Basic'. It's really quite embarrassing.
I'll tell you what isn't embarrassing, though. This affogato, that's what. Make it for friends, family, fall dinners, morning meetings, pretty much anything and you will be anything but embarrassed when you serve it. It's the bees knees, the bomb.com, the shizzle nizzle, the nicest spicest, the pumpkin munchkin....ok, clearly rhyming is not my calling in life, so I'll save us all from anymore attempts at rhyming. However, I think you get the idea of just how good these pumpkin spice affogatos are.
If you've never had affogato.....OMG! I don't even know if we can be friends!!!!!!! Ok, maybe we can, but like only if you go have one RN! It's literally the easiest thing ever to make. You only need two ingredients. Repeat after me- TWO. INGREDIENTS. Espresso + ice cream. That's it. Crazy, right??! Gotta love the Italians for keeping things simple. For my pumpkin spice twist, I used an easy no-churn pumpkin spice ice cream (although you could buy some if you want to make it even easier) and, to really up the pumpkin factor (#neverenoughpumpkin), I used pumpkin spice coffee (I'm loving this one from Target). For fun, I also added in a couple of cookies. I'd say they aren't really necessary but then again cookies are kind of necessary for life, sooooo.... Cookies, or no cookies, though, if you love PSL's, you'll love these pumpkin spice affogatos. In fact, even if you don't like PSL's you like these affogatos, because, real talk, PSL's are overly sweet and fake-tasting and not actually all that good, but these little mugs of deliciousness, these are good.
INGREDIENTS
Pumpkin spice coffee
Pumpkin spice ice cream (recipe below)
Pirouette cookies (optional)
INSTRUCTIONS
Prepare the coffee as espresso.
While the coffee is brewing, scoop a one-two scoops of ice cream into a mug. Top with hot espresso and garnish with a cookie or two. Serve immediately.
INGREDIENTS
1 cup heavy whipping cream
1/2 a 14-ounce can of condensed milk
1/2 cup unsweetened pureed pumpkin
1/2 teaspoon of vanilla
1/2 teaspoon cinnamon
1/4 teaspoon ginger powder
A large pinch of nutmeg and salt
INSTRUCTIONS
Line a loaf pan with wax or parchment paper and set it aside.
In the bowl of an electric mixer, beat the heavy cream until stiff peaks form. Set aside.
In a large bowl, stir together the remaining ingredients until well combined. Gently fold in the whipped cream. Pour into the lined loaf pan and place in the freezer for at least 3-4 hours, or until frozen.
Store in an airtight container in the freezer.
