EDITOR’S NOTE

I’m not sure how we’re already embarking on the sixth month of the year, but here we are, none the less.

And speaking of embarking, we are getting ready to head out on a bit of an extended leave. First up on the agenda is the east coast with stops in New York and New England. We’ve got less than two weeks until we leave, and I’ve done all of exactly nothing to prepare (I know, that doesn’t sound like me at all. Ha!). Like, we still haven’t even booked our hotels. Oops! So if you need me I’ll be figuring out where we’re staying, setting up care for Bomba and trying to figure out how to pack for city, country and beach and 5-7 different destinations in a carry-on. I’ve never managed to pack for even a single destination in a carry-on so this will be…interesting?? To say the least. Send thoughts and prayers.

Before we leave I’m trying to fit in as much cooking as I can. While I know there will be some opportunities to cook while we’re away, it’s definitely going to lean heavy on the eating out side, and while I love a good restaurant meal, a month+ of it gets to be a lot for me. I’m just one of those people that genuinely loves to cook all the time (I should really run a food blog or something, huh?! Ha!) Also, I’m desperately overdue for getting some new recipes up on the site. And as luck would have it the market was absolutely overflowing with goodness this past weekend so I am stocked up and ready to cook all sorts of fresh and flavorful summery goodness before we leave.

WHAT I’M COOKING //

Inspired by my most recent farmer’s market haul here are a few of my favorite recipes to make with this season’s produce-

  • CHERRY BOURBON RIBS- I’m not normally a ribs kinda gal, but I make an exception for these because they are fall-off-the-bone delicious! Did I mention how easy they are to make, too?!

  • TOMATO, PEACH + STRAWBERRY SALAD WITH WHIPPED FETA AND SUMAC VINAIGRETTE- One of my absolute favorite summer salads. It’s delicious, refreshing and unique. Impressive enough for dinner parties, easy enough to make on weeknights.

  • MEDITERRANEAN TUNA PASTA- A simple pasta that’s fresh and flavorful and packed with nutrients, it’s light yet hearty enough to fill you up and perfect for an easy weeknight dinner. And the leftovers hold up well for lunch the next day, too!
