Fresh Carrot Juice

This is my go-to carrot juice recipe. It only requires 4 ingredients and a few minutes to make, and the results are so tasty. Think of it kind of like the v8 carrot juice blend, but without any unnecessary additives and, well, like a million times more delicious. Itโ€™s a little sweet, a little zesty (thanks to the ginger), full of nutrients and packed to the brim with vitamin C. Itโ€™s great as an afternoon pick-me-up, or really anytime you need a little boost of energy, and itโ€™s also great as support for your immune system. Cheers!

carrot juice

INGREDIENTS

  • 2 pounds carrots, washed, tops removed and cut into thirds

  • 2 oranges, tops and bottoms sliced off and cut in half

  • 2 cups pineapple cubes, canned (in juice) or fresh

  • 2 inch piece of fresh ginger

DIRECTIONS

  1. Juice all ingredients together in a juicer (This is the one I use and love!). Enjoy immediately.

  2. If youโ€™d prefer to make your juice in advance, or have leftovers, it can be stored in an airtight container in the refrigerator for up to 24 hours.

  3. P.S. Donโ€™t throw out the leftover juice pulp! Hereโ€™s what you should make with it instead!
