White Chocolate Shamrock Matcha Cookies
When I was little, St. Patrick's Day only meant one thing- I wanted all my food to be green. Green milk, green cupcakes, green frosting, green mashed potatoes. Basically, if it wasn't green, I wasn't eating it. Some might say I was crazy, but I like to just think of it as dedication.
These days, I'm not nearly as obsessive about eating all the greens on St. Patty's Day, but I still can't fully resist the holiday spirit. This year, to celebrate, I made these white chocolate shamrock matcha cookies. They're a nice deviation from the typical mint and/or boozy treats characteristic of this holiday. Plus, the fact that they're loaded with matcha basically makes me feel like they're a health food, which essentially means I really don't need to eat any actual spinach/lettuce/kale greens (Sorry Mom!).
