Fresh Carrot Juice

This is my go-to carrot juice recipe. It only requires 4 ingredients and a few minutes to make, and the results are so tasty. Think of it kind of like the v8 carrot juice blend, but without any unnecessary additives and, well, like a million times more delicious. It’s a little sweet, a little zesty (thanks to the ginger), full of nutrients and packed to the brim with vitamin C. It’s great as an afternoon pick-me-up, or really anytime you need a little boost of energy, and it’s also great as support for your immune system. Cheers!


INGREDIENTS

  • 2 pounds carrots, washed, tops removed and cut into thirds

  • 2 oranges, tops and bottoms sliced off and cut in half

  • 2 cups pineapple cubes, canned (in juice) or fresh

  • 2 inch piece of fresh ginger

DIRECTIONS

  1. Juice all ingredients together in a juicer (This is the one I use and love!). Enjoy immediately.

  2. If you’d prefer to make your juice in advance, or have leftovers, it can be stored in an airtight container in the refrigerator for up to 24 hours.

  3. P.S. Don’t throw out the leftover juice pulp! Here’s what you should make with it instead!
