Mini Cookie Butter Tarts
Well look what we have here. Cookie butter tarts...with cookie crust....with cookie butter drizzle. Are you guys even ready for something so epic?! I hope so because they're, well, pretty epic.
I'm kind of a huge fan of cookie butter. And by huge fan, I mean I go absolutely nuts for the stuff. So it should come as no surprise that I created a triple cookie butter tart, and that I just so happen to be writing about said tarts from 30k feet up in the sky eating what else but a Biscoff cookie (The fact that they hand them out on flights is pretty much the only thing I enjoy about flying).
While there are certainly no shortage of options as to how cookie butter can be enjoyed these days, these tarts may just be one of my favorites. They're salty, sweet, creamy and crunchy. Oh and mini, which automatically makes me all kinds of googly-eyed. The filling is made with Greek yogurt as the base, meaning they're decadently divine without tons of extra calories (ya know, if you ignore the calories of the cookie butter and cookies and butter) and while they look complicated, they're actually super easy to make (aka they're great for the hectic holiday season).
